Catering for a wedding, how much salad for 60 people?

I am catering for a wedding. I guess I need to know quantities of food i need for ham, corned beef, chicken, coleslaw, potato salad, rice salad, dips, pavlova, mud cake. I think I read somewhere 6 onzs ham per person. thanks for your help
